Excuse my lack of car knowledge, i'll try my best to explain my situation
so my car is parked on an incline nose facing down and i had discovered that the water has been pooling in both the passenger and driver's area, upon further investigation i had found that the water was pooling where the trunk/boot lifts are and is going over and under the weatherstripping, i was wondering how any of you would go about solving this issue

First off, welcome to NT.

Question, do you have a sunroof? More likely is the roof drains are clogged and causing a leak around the A or B pillars. Quite a few threads on better ways to clean the drains.
This incline the car was/is parked on, just how steep is it? Must be really steep to allow water in the hatch channel to get deep enough to drain into the interior.

If it is the hatch seal leaking, does it look damaged?

Did you already remove the weatherstripping in that photo? because if you didn't, well there's your problem: there is none.

Edit: I've had issues with the seams in the trunk gutter area splitting & leaking, if you removed the weatherstripping in that photo then you might want to inspect the seams for cracks. I also had issues with the foam behind the window trim leaking. It wasn't the rubber the window rests on, it was where the weatherstripping was bolted to the panel & leaking straight onto the inside of the A-pillar trim.

yeah i had to remove it to address it and i've had thoughts to use 3m to reseal
i had to test it with water and it seems no water got through anywhere else, was just filling when the rain started
is the weatherstripping supposed to be bolted?
edit*

unfortunately the garage is packed like a hoarder's home
and there is no space to park on a more level surface
curious on the long term impact of parking on that incline as well as how to solve future water buildup at that angle, what would you guys do to solve the water issue

From the looks of it, that's your parking spot?
The drain channel isn't really designed for a nose down parking. Frankly, no hatch is. Can you park nose up?

If the seal looks OK, then a flexible sealant (silicone sealer/RTV) from the metal to seal and maybe a medium density self adhesive weather stripping between the hatch and existing seal to add pressure on it.
Nose up parking is easiest though.

Yeah I could try that, I did try parking nose up and the car ended up not starting at all, I guess it has something to do with the displacement of fluids, and by parking this way would this reach a similar issue where the water would be building up in places it shouldn't?
Would 3M be good for that, could you recommend a"flexible sealant (silicone sealer/RTV)"?
Another issue, I'm not sure about, is that after accelerating the car, the car would continue accelerating without me touching the pedal!
